Cooking at Home | Coconut Slice
I enjoy sharing my cooking dilemmas with my co-workers. I wish I could find cooking and baking enjoyable but it feels like a chore sometimes. If there's too many ingredients, I feel out of my league. In saying that, I love to bake for others and that's where I try new recipes and techniques. Sometimes they turn out and sometimes they don't!
The science department gathered together for an afternoon tea to celebrate an upcoming wedding and we each bought in things to share. One of the ladies made this amazing slice and she was so lovely sharing the recipe with us. She said it was so easy to make as it only had a handful of ingredients so I tried it the following weekend. It was super easy!! Hubby loved them with his major sweet tooth. He did recommend to add another base to it as it was a bit hard to eat with a chocolate base. So here is a slightly altered recipe to the original! I will also provide a vegan alternative at the end.
That's it! Super easy!! And delicious! I mentioned before, you can totally substitute these ingredients for any variation that you please. As you can see from the college above, I added some white chocolate to make up the weight as I didn't have enough dark chocolate but you can even use milk chocolate.
You can change up the ingredients to make it 'raw' like a date and walnut base, vegan chocolate or cacao powder and coconut oil for the chocolate layer and instead of egg use coconut oil or milk and a sugar nectar.
