Cooking at Home | ANZAC Biscuits

Last weekend I did a little bit of baking in honour of ANZAC Day which was on the 25th of April. ANZAC biscuits were made for those serving in Gallipoli in the first World War, due to their simple recipe and their ability to keep for long periods of time, they became very popular since then.


I used the recipe from BBC Good Food and tweaked some of the measurements when I made them the second and third time. The recipe below is what I ended up using on my third attempt. These are for chewy biscuits and not too sweet. The batch makes around 24 biscuits.

So prior to starting, I knew that the balls of dough should spread out really well. However, with all of my attempts, the balls didn't spread at all!!! I have no idea why but they stayed in their little round shapes. So with about 4 minutes to go, I had to squish them down with a fork. This also made them cook more even and get that nice golden colour on the top. The timing was slightly different each time I made them so it might be the same for you too. But just judge it by eye as to when to take them out of the oven. 



These were a hit with hubby, work colleagues and circus friends especially those who hadn't experienced the ANZAC biscuit before. I should make these more often!

Anyone with ideas on why my biscuits didn't flatten?
