I love cooking when it is easy. Few ingredients and getting my hands dirty. My love for dumplings is definitely the Chinese in me. I remember my Mum and 9th aunty (yes number 9!) making them in the afternoons. There would be too many to eat in one sitting! I can't say that I'm as good as they are but I enjoy making them from time to time using different recipes. On the weekend, I made a big batch of 40ish dumplings, froze most of them and ate some Monday afternoon. I used Alastair McLeod's recipe from the tv show The Living Room, although I loosely followed the recipe haha.


Ingredients
400g-500g pork mince
2 spring onions, chopped (white and some of the green)
some coriander leaves, chopped
2 tbs soy sauce
2 tbs oyster sauce
2 tsp ginger, grated
1 tsp minced garlic
a packet of gow gee or wonton wrappers (or two)

Method
1. Put all of the ingredients in a bowl except for the wonton wrappers.
2. Get in there with your hands and combine well.
3. Spoon a tsp amount of the mixture into the centre of a wonton wrapper.
4. Slightly wet two opposite edges with water with your finger and fold the wrapper together.
The folding doesn't have to be neat just make sure the meat is secured inside.
5. Continue until all of the mixture is used up.

To cook the wontons, place them in a steamer basket and cook for 10-15 minutes. There's a recipe on the website for a dipping sauce if you cook them this way.


I like eating mine in a broth so I boiled some water in a saucepan with a stock cube. I added two cloves, half a star anise and 2 big slices of ginger. I cooked the wontons in the broth for about 10 minutes. I would add some vermicelli noodles for a more filling meal. 


Yum! Such a quick and easy snack or meal!
