Sweet Eats | Easy Caramel Slice and Chocolate Mousse


My fiancé has such a sweet tooth. I cannot tell you how much Cadbury blocks, donuts, fairy bread and cakes we have gone through this year, let alone the amount of dollars we spend on them. So, I like to use what I've got in the kitchen to whip some delicious yumminess. Mind you, I'm no baker but I always like to try to make new things. Both the caramel slice and mousse were new to me. Let's see how I went!

Caramel Slice (recipe here)

To make the base, combine 1 cup of sifted plain flour, 1/2 cup of brown sugar, 1/2 of desiccated coconut and 125g of melted butter in a bowl. Press the mixture into a lined square baking tin and bake for 15-20 minutes a 180°C. Remove from the oven and cool.

To make the caramel filing, combine 400g can of sweetened condensed milk (brings back childhood memories), 2 tbs golden syrup (I only had honey on hand) and 60g of melted butter in a saucepan. Cook on medium heat, whisking regularly for about 8 minutes or until golden (mine didn't go golden, I think it was because of the honey). Let the mixture cool and then pour over the base.

Place the slice back into the oven and bake for about 15 minutes or until firm. Let it cool before placing it in the fridge to set. I couldn't be bothered to melt a lot of chocolate in the microwave so I only used a large handful of dark chocolate buttons. Heated in the microwave or 30 second intervals until it was melted. Then I blobbed the chocolate all over the top of the slice. Yum! 



Daniel said it tasted just as nice as the ones made by the lady down at the corner store. I can taste the honey flavour though but that didn't bother me. I would probably use golden syrup next time for a truer caramel taste.

Chocolate Mousse (recipe here)

I love me some chocolate mousse on the rare occasion. I had some bottles of cream collecting in the fridge so I needed to use them up before they expired. And you just need 3 ingredients. Yes!



Whip 300mL of thickened cream until soft peaks form. Then melt 180g of dark chocolate buttons (or bits) in the microwave at 40 second interval, stirring before each heating. Once the chocolate has melted, add 4 egg yolks and combine well. Whip the remaining 4 egg whites until soft peaks form. Fold the chocolate mixture into the cream and then gently fold the egg whites into that mixture. Spoon the foamy chocolatey goodness into cups/glasses/ramekins (see title pic) and place in the fridge to chill. Delish!


I served mine up with some strawberries and extra cream.

I am extremely happy with the results of these two. It's a bit of a gamble when it comes to me baking. But let me tell you, they were both very delicious!
